Bob's Basic Red Chile Sauce
What you need:
2 pounds ground beef
1/4 cup ground red new mexico chile
4 cloves garlic chopped or crushed
1/4 cup chopped onions
Flour
Salt and pepper
A dash of red wine

Preparation:
Brown the beef and onions
Separate the meat from the fat
Slowly stir in and brown flour into the fat, like making a rue, add some water if too thick
Stir in powdered chile and brown, continuing to add water if needed
Add meat and garlic back to the mixture and more water if needed, simmer for ten minutes stirring occasionally
Add a dash of red wine, salt and pepper to taste
Now you can make and top enchiladas, frito pies, burritos, beans and soups. I also like to top slices of thanksgiving turkey with this chile sauce.

Frito Pie
What you need:
Cooked pinto or black beans
Chile sauce (see above) Spinach or lettuce
Chopped onions
Chopped tomatoes
Shredded cheddar cheese
Plain Fritos or corn chips, the broken corn chips at the bottom of the bag are perfect for this
Other toppings:
Chopped jalapenos
Cilantro
Sour cream
Salsa

Preparation:
Fill the bottom of a soup bowl 1/4 to 1/3 full with the fritos or chips
Cover with a serving of warm beans
Add your chile sauce on top of the beans
Now top with lettuce, onions, tomatoes, cheese and whatever other toppings you desire
With all of the different colors and textures of the ingredients, and a tiny bit of arranging, you can make a visually stunning treat out of this simple meal in a bowl, enjoy!
